Keto Matcha Donuts

We all love donuts! This is the best recipe for healthy, moist, and delicious donuts with zero sugar! This recipe will help you conquer your fitness goals while also satisfying your sweet tooth! These gorgeous green donuts are fluffy, moist, and sweet! Here’s the keto kicker.  Each donut only has 6g of carbs and is sugar-free!  They’ll also go well with a Matcha Dalgona Latte!

So, what’s Matcha anyway?

Matcha is a finely ground powder from a uniquely grown young green tea plant. Not only does it have caffeine to keep you energized, but it also contains antioxidants that are proven to help protect the liver, promote heart health, and even weight loss!

Matcha by itself is a bit bitter with some notes of nuttiness and some grassy sweetness.  It has become a popular and versatile ingredient in many recipes. Many have used matcha in teas, lattes, and desserts! We will be sharing an incredible healthy but delicious breakfast (or dessert) option that uses matcha in a donut!

While baking these donuts, we suggest using silicon donut hole baking sheets.  They come in all different colors and the donuts will not burn or stick like they do in metal pans! We got ours from Amazon.

Donuts are fun to make because you can be so creative with the toppings! For this recipe, we will be making 4 different toppings!

Decorating Options

  1. Glaze

  2. Coconut/Almond Flakes/fresh strawberries

  3. Sprinkles

  4. Sugar Matcha

Choose 1 or make all four!

What you’ll need for the donut batter: 

  • ¼ cup melted coconut oil

  • 1/3 cup of erythritol granulated sugar (we used Swerve)

  • 1 large egg

  • ¾ teaspoon of baking powder

  • 1/8 teaspoon of baking soda

  • ½ teaspoon of matcha powder

  • 1/8 teaspoon of nutmeg

  • Heaping ¼ teaspoon of salt

  • 1 1/3 cups of finely sifted almond flour

  • ½ cup of milk

Decorating option 1: Matcha Glaze

  • ½ cup of confectioners erythritol sugar (we used Swerve Confectioners)

  • 1/8 to ½ teaspoon of Matcha Glaze (you can adjust depending on how green you want your glaze)

  • 2-3 tbsp of almond milk

Decorating option 2: Coconut/Almond Flakes/fresh strawberries

  • Glaze ingredients

  • Unsweetened coconut flakes

  • Thin almond shavings

  • Fresh strawberries cut into small pieces

Decorating option 3: Sprinkles

  • Glaze ingredients

  • Candied Sprinkles

Decorating option 4: Matcha Sugar

  • ½ cup of Swerve Granulated sugar

  • ¼ to ½ tsp of matcha

  • Coconut Cooking Spray

Instructions

1. Preheat the oven to 425°F and lightly grease one standard 6 hole donut pan

2. In a medium bowl, whisk together the coconut oil and sugar. Add the egg and whisk to combine. Add the baking powder, baking soda, matcha powder, nutmeg, salt, and vanilla and whisk to combine.

3. Add milk and whisk then add almond flour and fold in the almond flour. The consistency will be thick and sticky.

4. Spoon the batter into the doughnut pan (it will be thick and sticky) about ¾ of the way to the top.

5. Smooth out batter with a small spoon or wet your fingers to smooth out.

6. Bake for 10 minutes. Remove from the oven and let sit for 5 to 10 minutes before removing from the pan. Remove donuts from the pan and place it in the fridge for 30 minutes.

8. Matcha Glaze: In a small doughnut-sized bowl, whisk together the powdered sugar and matcha powder, then whisk in the almond milk until smooth. Dip each doughnut in the glaze and let the excess glaze drip off.

-   Before the glaze dries, add your toppings

o   Coconut flakes

o   Almonds

o   Fresh strawberries

o   Sprinkles

9. Matcha Cane Sugar: In a small doughnut-sized bowl, mix the cane sugar and matcha powder. Spray the entire donut with coconut oil and dip into the sugar mixture. The coconut oil helps the sugar adhere and it also produces the most fried-doughnut-like taste.

If you’re saving these treats for later, keep them in an air-tight container and place in the refrigerator.
